Minestrone soup with chicken recipe

  1. Heat the oil in a saucepan.
  2. Add the onion, carrot, celery and potato, and then fry for 4 minutes.
  3. Add the garlic and saute for 30 seconds.
  4. Add the flour, and then blend in the tomatoes and stock.
  5. Add the tomato paste, sugar, thyme (optional) and cabbage.
  6. Bring up to the boil.
  7. Cover and simmer for 10 minutes or until the vegetables are cooked.
  8. Serve with parmesan cheese if you like, or some fresh bread.
