Shrimp Creole
- 2/3 c. oil
- 1/2 c. flour
- 1 3/4 c. green onion, chopped
- 1/2 c. green pepper, chopped
- 1 c. onion, chopped
- 1/3 c. celery, chopped
- 4 tsp. garlic
- 1/4 tsp. chili powder
- 1/4 tsp. mace
- 1/2 tsp. thyme
- 1/2 tsp. cayenne pepper
- 3 Tbsp. parsley
- 1/4 tsp. dry basil
- 4 tsp. fresh lemon juice
- 2 whole cloves
- 3/4 tsp. black pepper
- 4 Tbsp. dry red wine
- 6 whole allspice
- 2 tsp. salt
- 4 bay leaves
- 1 Tbsp. minced dry chives
- 1 (1 lb.) can tomatoes, drained
- 1 (8 oz.) can tomato sauce
- 2 c. water
- 2 lb. shrimp
- Make a paste with the oil and flour in a pot.
- Add the rest of the ingredients, except the shrimp.
- Simmer for about an hour.
- Add the shrimp and simmer until shrimp are done.
- Serve over rice.
