Toasted Crabmeat Rounds
- 1 (6 oz.) can crabmeat
- 1/2 c. mayonnaise
- 1 Tbsp. fresh lime juice
- 1 Tbsp. green onion tops, finely chopped
- 1 Tbsp. dry sherry
- 1/4 tsp. tarragon
- 1/4 tsp. salt
- 1/8 tsp. cayenne pepper
- paprika to taste
- Drain and flake crabmeat with a fork or your fingers and set aside.
- Put all the remaining ingredients in a blender.
- Cover and blend on high speed for 20 seconds, stopping to scrape down the sides of the blender.
- Combine and mix together the sauce and crabmeat.
- Pile on whole wheat or rye bread rounds and sprinkle top with paprika.
- Broil until crabmeat starts to brown, around 7 minutes.
- Remove from broiler.
- Place on serving dish and serve immediately.
- Makes 1 cup or about 16 rounds.
