Red Beans And Rice

  1. Rinse the beans.
  2. In a large Dutch oven cover beans with with 6 cups cold water.
  3. Bring to boiling; reduce heat.
  4. Simmer 2 minutes.
  5. Remove from heat.
  6. Cover; let stand 1 hour (or soak beans overnight in a covered pan).
  7. Drain and rinse the beans.
  8. In the same Dutch oven combine rinsed beans, 6 cups hot water, ham bone, onion, garlic, bay leaf and red pepper.
  9. Bring to boiling; reduce heat.
  10. Cover and simmer 2 1/2 hours or until beans are tender.
  11. Stir occasionally.
  12. Add more water, if necessary.
