Easy Chicken & Rice Casserole Recipe

  1. Preheat oven to 350 degrees.
  2. Blend soup and lowfat milk.
  3. Reserve 1/2 c. of the mix.
  4. Stir together remaining soup mix, the rice, mushrooms (with liquid) and half of the onion soup mix.
  5. Pour into ungreased baking dish 11 1/2 x 7 1/2 x 1 1/2 inches.
  6. Arrange chicken breasts on rice mix.
  7. Pour reserved soup mix over chicken and sprinkle with remaining onion soup mix.
  8. Bake covered for 1 hour.
  9. Uncover, and bake an additional 15 min.
  10. Serves 4.
