Easy Chicken & Rice Casserole Recipe
- 1 (10 1/2 ounce.) can condensed cream of mushroom soup
- 1 soup can lowfat milk
- 3/4 c. uncooked reg. rice
- 1 (4 ounce.) can mushrooms, stems & pcs
- 1 env. dry onion soup mix
- 2 whole chicken breasts, split in half or possibly 4 breasts
- Preheat oven to 350 degrees.
- Blend soup and lowfat milk.
- Reserve 1/2 c. of the mix.
- Stir together remaining soup mix, the rice, mushrooms (with liquid) and half of the onion soup mix.
- Pour into ungreased baking dish 11 1/2 x 7 1/2 x 1 1/2 inches.
- Arrange chicken breasts on rice mix.
- Pour reserved soup mix over chicken and sprinkle with remaining onion soup mix.
- Bake covered for 1 hour.
- Uncover, and bake an additional 15 min.
- Serves 4.
