Bogracs Gulyas (Kettle Goulash) Recipe
- 4 Tbsp. Bacon fat
- 5 x Lg onions, coarsely minced
- 2 x Lg green peppers, minced
- 3 x Garlic clove, chopped
- 1 1/2 Tbsp. Hungarian paprika
- 3 lb Stewing beef, in 1" cubes
- 1 x Pepper, to taste
- 1 x Salt, to taste
- 6 ounce Tomato paste
- 1 x Lowfat sour cream, at room temp.
- Preheat oven to 325f.
- Heat fat in a deep heavy pot.
- Cook the onions, peppers, and garlic till the onions are limp and transparent and paprika has lost its raw taste.
- Add in beef and remaining ingredients except lowfat sour cream.
- Stir well to combine.
- Simmer in preheated oven for 1 1/2 to 2 hrs or possibly till the meat is tender.
- Adjust oven temperature during cooking time so contents of pot remain at a simmer.
- Serve in shallow soup bowls with a Tbsp.
- of lowfat sour cream atop each serving.
