Ginger Jam For Ginger Tea

  1. You can make this with any kind of fresh ginger.
  2. I used regular ginger this time.
  3. Wash the ginger well, cut off any bad parts, and weigh.
  4. You can leave the skin on.
  5. Chop up finely in a food processor or grate it.
  6. If you are grating it, do so in a way that cuts through the fibers.
  7. Put the grated ginger and the same weight in honey, plus the light brown sugar and lemon juice in a pan.
  8. Simmer over low heat.
  9. Once it thickens, it's done.
  10. If you cook it for too long it won't blend well with milk tea, so it's alright even if it feels a bit liquid.
  11. It will thicken a little more when it cools.
  12. I add about 1 teaspoon to a mug of milk tea.
  13. Adjust the amount to taste.
  14. It's delicious in hot milk too.
