Ginger Jam For Ginger Tea
- 2 bags Ginger
- 1 the same weight as the ginger Honey
- 2 tbsp plus Light brown sugar (or white sugar)
- 1 tsp Lemon juice
- You can make this with any kind of fresh ginger.
- I used regular ginger this time.
- Wash the ginger well, cut off any bad parts, and weigh.
- You can leave the skin on.
- Chop up finely in a food processor or grate it.
- If you are grating it, do so in a way that cuts through the fibers.
- Put the grated ginger and the same weight in honey, plus the light brown sugar and lemon juice in a pan.
- Simmer over low heat.
- Once it thickens, it's done.
- If you cook it for too long it won't blend well with milk tea, so it's alright even if it feels a bit liquid.
- It will thicken a little more when it cools.
- I add about 1 teaspoon to a mug of milk tea.
- Adjust the amount to taste.
- It's delicious in hot milk too.
