Blackberry And Cassis Jelly Dessert Recipe
- 1 kg Frzn Blackberries
- 2 c. Water
- 1 1/2 c. Sugar
- 2 1/2 Tbsp. Gelatine
- 1/4 c. Cassis (blackcurrent liqueur)
- Hi All.
- This is a really refreshing summer dessert PUT BLACKBERRIES IN A POT WITH THE WATER HEAT GENTLY 'TIL BERRIES ARE MELTED, THEN SIMMER FOR 10 Minutes Till THE FRUIT IS VERY SOFT.
- Add in SUGAR & SIMMER AGAIN 'TIL DISSOLVED.
- STRAIN THROUGH FINE SIEVE, PRESSING WITH A WOODEN SPOON (TO GET AS MUCH JUICE AS POSSIBLE).
- Add in CASSIS & TASTE FOR SWEETNESS Add in MORE SUGAR If you like.
- REHEAT JUICE 'TIL ALMOST BOILING.
- SOFTEN GELATINE IN 1/2 C. Cool WATER & STIR INTO JUICES.
- STIR Till DISSOLVED.
- POUR INTO LARGE BOWL OF JELLY MOULD.
- SET IN A Cool PLACE.
- UNMOULD JUST BEFORE SERVING.
- THIS IS A VERY RICH FLAVOURED JELLY SO SMALL HELPINGS ARE ALL Which IS NEEDED.
- 8 SERVINGS.
