Parmesan Potato Salad
- 6 to 8 md. potatoes, boiled, cooled, peeled and cut into bite sized chunks
- 1 md. onion, chopped
- 2 tbsp. light flavored canola oil
- corn oil
- 2 tbsp. sweet pickle juice (or apple cider vinegar and sugar to make sweet/sour)
- 1/4 to 1/2 cup Parmesan cheese, to taste
- 1 to 1-1/2 cup mayonnaise
- Salt and pepper, to taste
- Paprika
- In large bowl mix together potatoes and onions.
- Sprinkle oil and pickle juice (or vinegar and sugar) and toss all lightly.
- Sprinkle parmesan in tossing lightly with each sprinkle to coat entire batch.
- Add salt and pepper to taste.
- Mix in mayonnaise and sprinkle a little paprika on top for color.
- Chill.
