Spring Salad
- 1 small pkg. apricot jello
- 1 small pkg. orange/lemon jello
- 1 pkg. unflavored gelatin
- 2 c. hot water
- 2 c. cold water, divided
- 2 bananas, sliced
- juice of 1 lemon
- 1 medium apple, chopped
- 1 small can crushed pineapple, drained (save juice)
- 1 large can fruit cocktail, drained (save juice)
- 1 c. miniature marshmallows
- Soften unflavored gelatin in 1/2 cup cold water.
- Dissolve flavored jello in hot water and add unflavored gelatin in dissolved also.
- Add remaining cold water and chill until thickened.
- Coat sliced bananas and apple with lemon juice.
- Add other ingredients to thickened gelatin mixture and pour into 13 x 9-inch glass pan; chill until set.
- Prepare Spring Salad Topping and spoon over gelatin.
- Top with cheese.
- Serves 12 to 20.
