Dirty Rice with Smoked Sausage

  1. Make the rice, in a medium saucepan combine the rice and chicken stock.
  2. Bring to a boil, reduce the heat and simmer until all the stock is absorbed into the rice, about 20 minutes.
  3. Meanwhile heat oil in a heavy-bottomed saute pan over medium-high heat.
  4. Brown the sausage.
  5. Once browned, add the garlic, onion, celery, and green bell pepper.
  6. Cook until softened, about 5 minutes.
  7. Season with salt and pepper.
  8. Add 1 cup chicken stock and cayenne.
  9. Cook until the stock has reduced a little.
  10. Add the cooked rice and parsley and stir thoroughly.
  11. Taste and season with salt and pepper, if necessary.
