Stacking Enchiladas
- 1 pound Hamburger
- 1 whole Onion, Chopped
- Garlic Salt, to taste
- 1 quart Tomato Juice ( I Just Use A Large Can, Which Is More Than A Quart, But It Works Great)
- 1/2 cans El Paso Sauce
- 2 cans Tomato Sauce
- 1 teaspoon Oregano
- 1/2 cups Water
- 3 Tablespoons Cornstarch
- Corn Tortillas
- Brown hamburger and onion.
- Add the rest of the ingredients (except the tortillas, water and cornstarch) and simmer for 1/2 hour.
- Mix together 1/2 cup water and 3 tablespoons cornstarch and stir into sauce until it thickens.
- Warm tortillas in the sauce and pile 3 warmed tortillas on a plate with extra suace on top.
- Top with grated cheese, tomatoes, onion, lettuce and sour cream, or whatever floats your boat, but these are my favorites.
