Broccoli Chicken Rice Casserole
- 3 ribs celery, chopped
- 1/4 cup minced onion King Sooper's 1 lb For $0.99 thru 02/09
- 3 carrots, sliced and partially cooked
- 1/2 cup (1 stick) margarine or butter
- 1 cup water
- 1 can (10-3/4 oz.) condensed cream of mushroom soup
- 1 large bunch broccoli, chopped
- 1/2 lb. (8 oz.) VELVEETA, cut up
- 2 cups cooked rice
- 1 tsp. salt
- 1/4 tsp. pepper
- 4 cups cooked sliced chicken Whole Foods 1 lb For $3.99 thru 02/09
- Saute celery, onion and carrots in margarine in large skillet.
- Add water and mushroom soup.
- Add chopped broccoli, VELVEETA, rice, salt and pepper.
- Stir.
- Layer bottom of 4 qt.
- casserole dish with chicken.
- Cover with VELVEETA mixture.
- Bake in oven at 350F for 20 minutes.
- Makes 8 to 10 servings.
