Diane's Six-Spice Oatmeal Raisin Cookies
- 1 1/2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon freshly grated nutmeg
- 1 teaspoon ground ginger
- 1 teaspoon ground cumin
- a pinch ground cloves
- a pinch cayenne
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 sticks (1 cup) unsalted butter, softened
- 1 cup packed brown sugar
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla
- 3 cups old-fashioned or quick-cooking rolled oats
- 1 cup raisins
- Preheat oven to 375F.
- Into a bowl sift together flour, spices, baking soda, and salt.
- In a large bowl with an electric mixer beat butter and sugars until light and fluffy and beat in egg and vanilla.
- Add flour mixture and slowly beat until just combined well.
- Stir in rolled oats and raisins (dough will be stiff).
- Working in batches, drop dough by level tablespoons about 2 inches apart onto an ungreased baking sheet and bake in middle of oven until golden, 8 to 10 minutes.
- Cool cookies on baking sheet 1 minute and transfer to racks to cool completely.
