Cheesy Spinach & Stuffing Brunch Strata

• 1 small onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
• 1/2 cup chopped red peppers
• 4 cups tightly packed torn fresh spinach
• 1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
• 6 eggs, beaten
• 2 Tbsp. chopped fresh oregano
• 3/4 cup KRAFT Shredded Italian* Five Cheese Blend

1. Heat oven to 375 degrees F.
2. Cook and stir onions and peppers in large skillet sprayed with cooking spray on medium-high heat 5 min.
3. or until crisp-tender.
4. Remove from heat.
5. Stir in spinach.
6. Prepare stuffing as directed on package.
7. Add to spinach mixture along with the eggs and oregano; mix well.
8. Spoon into 8-inch square pan sprayed with cooking spray; top with cheese.
9. Bake 35 min.
10. or until knife inserted in center comes out clean.
11. Cool 15 min.
12. before cutting to serve.
