Icebox Cake
- 1 pkg. red jello powder (or desired flavor)
- 1 c. fruit juice
- fruit cocktail
- peaches
- any other fruit desired, cut in chunks
- juice of 1 lemon or 2 Tbsp. ReaLemon
- 1 c. sugar
- 1 can chilled evaporated milk
- pineapple
- bananas
- graham cracker crumbs
- Drain fruit cocktail and warm the 1 cup of juice.
- Dissolve jello and sugar in juice, then add juice of 1 lemon.
- Chill until thick and syrupy.
- Whip jello mixture; whip chilled evaporated milk.
- Mix the 2 mixtures together.
- Add fruit cocktail and all other fruits.
- Put crushed graham cracker crumbs in a 9 x 13-inch dripper pan.
- Pour in the mixture.
- Top with more cracker crumbs. Set in fridge all day or until set well.
- Cut in squares and serve.
