Mediterranean Salmon Salad Wrap with Arugula & Balsamic-Yogurt Dressing
- Balsamic-Yogurt Dressing
- 1-1/2 cups KRAFT Balsamic Vinaigrette Dressing
- 1-1/2 cups plain nonfat yogurt
- 2 Tbsp. lemon zest Safeway 4 ct For $5.00 thru 02/09
- 1 Tbsp. cracked black pepper
- Salmon Salad
- 3 qt. cooked flaked salmon
- 1-1/2 qt. yellow peppers, diced
- 1-1/2 qt. plum tomatoes, seeded, diced and drained King Sooper's 1 lb For $0.99 thru 02/09
- 1-1/2 qt. cucumbers, diced
- 1-1/2 cups green onions, finely chopped
- 1-1/2 cups fresh basil, chiffonade
- 1-1/2 gal. torn arugula, loosely packed
- 2 doz. whole wheat tortillas (10 inch)
- Balsamic-Yogurt Dressing: Whisk all ingredients until well blended.
- Salmon Salad: Combine all ingredients except arugula and tortillas.
- For each serving: Combine 1 cup each salmon mixture and arugula; spoon down center of 1 tortilla.
- Fold in sides of tortilla, then roll up.
- Cut diagonally in half.
