Middle Eastern Grilled Chicken Recipe
- 4 chicken breast halves, skinned & boned
- 1/4 c. lemon juice
- 2 tbsp. extra virgin olive oil or possibly other veg. oil
- 2 tbsp. spicy mustard
- 1/2 teaspoon oregano leaves
- 1/4 teaspoon salt, optional
- 4 med. onions, cut in halves
- 1 green pepper, cut into 1" squares
- Cut chicken into 1 inch pcs.
- Combine lemon juice, oil, mustard, oregano and salt; add in chicken, stirring till well coated.
- Cover and chill at least 2 hrs.
- Arrange on skewers, alternating with onions and green pepper.
- Grill over warm coals or possibly broil 10-15 min, turning occasionally and brushing with marinade.
- Makes 4 servings.
