Crab Cakes, Casserole Or Dip
- 1 lb. crab meat (2 c.)
- 1 tsp. grated cheese
- onion
- 2 tsp. Worcestershire sauce
- juice of 1/2 lemon (large)
- 5 saltines, crumbled (use more to stiffen)
- 1/2 c. mayonnaise
- 1/4 tsp. cayenne pepper
- 2 Tbsp. butter
- 3 Tbsp. flour (heaping)
- 1 egg, beaten
- 1 c. milk
- Make white sauce using butter, flour and milk.
- Let cool.
- Add egg, mayonnaise, salt, pepper to taste, chives, Worcestershire sauce, lemon juice and cayenne pepper.
- Add crumbs; fold in crab meat carefully.
- Make cakes and brown in shortening.
- If put in casserole, make white sauce thinner or double number of cracker crumbs.
- Bake casserole 20 to 30 minutes at 400u0b0.
- Dip made same as casserole.
