Steak Aupoivre

  1. Combine vinegar and brown sugar.
  2. Flatten steaks with side of heavy cleaver.
  3. Press 1/2 teaspoon of ground peppercorn into each side of each steak.
  4. Melt butter in skillet and saute steaks 3 to 4 minutes per side in butter.
  5. Pour off fat after removing steaks. Add vinegar and sugar mixture.
  6. Add stock and cream and cook until thick.
  7. Season with salt and pepper.
  8. Pour sauce over steaks to serve.
  9. Garnish with slices of lime.
  10. Serve with rice, spinach salad and asparagus.
  11. Makes 2 servings.
