Country Pork Chops
- 14 cup olive oil
- 2 yellow squash, cut into 1-inch chunks
- 1 zucchini, cut into 1-inch chunks
- 1 onion, cut into 1/4-inch slices
- 4 pork loin chops (about 1-inch thick, 1 1/2 lbs total)
- 14 teaspoon salt
- 14 teaspoon pepper
- 12 lb mushroom, quartered
- 28 ounces spaghetti sauce
- 1 teaspoon dried oregano
- In a large skillet, heat oil over medium-high heat.
- Add yellow squash, zucchini, and onion.
- Cook 4 to 6 minutes, or until vegetables are tender, stirring occasionally.
- Transfer vegetables to a bowl and set aside.
- Season pork chops with salt and pepper.
- In the same skillet, brown pork chops over medium-high heat about 2 minutes on each side.
- Return vegetables to the skillet, reduce heat to low, and stir in mushrooms, spaghetti sauce, and oregano.
- Cover and cook 30 to 35 minutes, or until pork chops are cooked through.
