Tuna Aloha
- 2 c. cooked rice
- 1 small can tuna
- 1/8 tsp. pepper
- 1 Tbsp. chopped parsley
- 1 tsp. salt
- 1 Tbsp. onion juice
- 3/4 c. Cheddar cheese, grated and divided
- 2/3 c. thick white sauce or cream of celery soup
- 10 slices pineapple (one 20 oz. can)
- 1/3 c. dry bread cubes or crushed cornflakes
- 2 Tbsp. brown sugar, moistened with pineapple juice
- Cook rice according to directions on package.
- Combine with tuna, parsley, salt, pepper, onion juice, 1/2 cup Cheddar cheese and white sauce or soup.
- Place pineapple slices on shallow baking dish; brush with brown sugar mixture.
- Spoon tuna-rice mixture onto pineapple slices, shaping each mound (an ice cream scoop works well).
- Sprinkle with dry bread crumbs or crushed cornflakes.
- Top each with a large pinch of grated cheese, using remaining 1/4 cup cheese.
- Bake at 350u0b0 for 20 minutes.
- Sprinkle with paprika before serving.
- Serves 5.
