Hg's Lucky 4-Leaf Salad W/ Feta & Apples - Ww Points = 4
- 3 cups lettuce (any 3-lettuce blend)
- 1 cup spinach leaves
- 1 fuji apple
- 14 cup reduced-fat feta cheese, crumbled (unless you can find fat free feta!)
- 14 cup red onion, thinly sliced
- 1 tablespoon natural almonds, recipe actually calls for All Natural Almond Accents, Original Oven Roasted
- 1 dash fresh ground black pepper (optional)
- 1 teaspoon light balsamic vinaigrette salad dressing (or any low-cal dressing)
- Cut apple into quarters and remove the core, seeds, and stem.
- Thinly slice, and then cut the slices in half widthwise.
- Toss together all ingredients except the almonds.
- Plate (or "bowl") your salad, and then sprinkle almonds evenly on top.
- You can add some pepper and/or dressing if you like, but this salad's so flavorful you may not even need 'em.
- Enjoy!
