Whole Orange and Almond Cake and Marmalade Cheesecake Cream
- 3 each oranges
- 350 grams almonds ground
- 350 grams sugar, superfine
- 1/2 teaspoon baking powder
- 9 large eggs
- 1 x mint sprigs to decorate
- 225 grams cream cheese full fat, softened
- 25 grams sugar, superfine
- 225 grams orange marmalade
- 300 ml double cream lightly whipped
- Preheat the oven to 180C/350F/Gas 4 and line two 1kg/2lb loaf tins with greaseproof paper.
- Remove the pips, then whizz all of the orange quarters, including pith and rind to a puree in a food processor or blender.
- To make the sponge: mix together the ground almonds, caster sugar and baking powder.
