Italian Vegetable Soup

  1. In a large pot, over medium heat, cook bacon until crisp.
  2. Remove; set aside.
  3. In 2 tablespoons drippings, cook onion until tender.
  4. Stir in reserved bacon and remaining ingredients except vegetables, alphabets and Parmesan.
  5. Bring to a boil; reduce heat and simmer 20 minutes.
  6. Add mixed vegetables and alphabets.
  7. Bring to a boil; reduce heat and simmer 10 minutes or until alphabets are tender.
  8. Serve with Parmesan cheese.
