Beef Pot Roast Braised With Onions

  1. Blanch bacon in boiling water for 3 minutes.
  2. Insert cloves into beef.
  3. Spread onions on bottom of heavy casserole.
  4. Lay bacon over onions.
  5. Sprinkle beef with salt and pepper and place on top of onions.
  6. Cover tightly.
  7. Roast in 325 F over for 3 to 4 hours or until meat is tender and onions are brown.
  8. Turn meat 3 or 4 times during cooking.
  9. To serve, slice meat and arrange on large platter.
  10. Spoon onions and juices over slices.
