Vhawks stuffed tomatoes!
- 4 each big ripe tomatoes
- 3 clove garlic cloves chopped
- 1 cup yellow onion chopped
- 1 tbsp herbs de provance
- 1 fresh basil (a handful)
- 1 fresh parsley ( a hand)
- 1 cup Brown rice with quinoa ( a prepackaged blend from Costco, makes life easier)
- 1/3 cup olive oil, extra virgin
- 1/2 cup fresh parmesan cheese
- 1 salt and pepper to taste
- You Can Add More OR Less Of The Ingredients Depending On What You like.
- This is just a rough estimate, but these turned out amazing.
- Preheat oven 350 then chop onion, garlic & saute in olive oil in a shallow skillet.
- Heat up rice with quinoa add onion and garlic to rice and quinoa mix add herbs and cheese.
- Cut tops off tomatoes spoon out center all of it
- Reserve about half of the tomatoes juices and tomato from the inside for mixing in with rice etc.
- About half of what was removed.
- Blend all ingredients together add more cheese if you want.
- Now for the fun part fill your tomatoes with the mixture top with more cheese this will give that beautiful golden brown color on top when they are done.
- Drizzle with olive oil and Place in a greased baking dish.
- I used olive oil.
- bake 25 to 30 min on 350F.
- Till golden and wrinkled on tomatoes.
- Serve hot and enjoy with a salad.
