Banana Chocolate Pudding Parfait
- 2-1/2 qt. Yellow cake mix
- 3 cups JELL-O Chocolate Flavor Sugar Free Reduced Calorie Instant Pudding, prepared
- 1-1/2 gal. fat-free milk
- 3 qt. prepared DREAM WHIP Whipped Topping
- 1-1/2 gal. ripe bananas, pureed
- 2-2/3 cups bananas, sliced
- Prepare cake batter as directed on package.
- Portion into jumbo (3-1/2-inch) muffin pans, placing one #20 scoop (1-3/4 oz.)
- of batter in each cup.
- Bake as directed on package.
- Cool on wire rack.
- Cut each cupcake horizontally in half.
- Fold whipped topping into banana puree.
- Layer 1/4 cup pudding, 1/4 cup of the whipped topping mixture and bottom half of cupcake in each parfait glass.
- Repeat layers of pudding and whipped topping mixture; cover with top half of cupcake.
- Garnish each with 3 banana slices.
- Refrigerate until ready to serve.
