Hawaiian Style Chicken
- 1 frying chicken, cut up
- 1/4 c. soy sauce
- 1/2 c. dry white wine
- juice of 1 lime
- 1 clove garlic, crushed
- 1 tsp. curry powder
- 1 tsp. fresh or ground ginger
- 1 tsp. each: thyme, oregano and pepper
- 2 medium onions, sliced
- 5 Tbsp. butter
- seasoned flour
- 1 1/2 c. uncooked rice
- 4 pineapple slices, halved
- 1/2 c. toasted slivered almonds
- 8 prunes, cut up
- 1 pimiento, minced
- Wash and dry chicken.
- Mix soy sauce, 1/4 cup wine and next 5 ingredients.
- Pour over chicken and marinate several hours, turning occasionally.
- Cook onions in 4 tablespoons of butter until golden. Remove onions; remove chicken from marinade.
- Dry and sprinkle with flour.
- Brown chicken in drippings.
- Add onions and marinate. Cover and cook 45 minutes, uncovering pan last 15 minutes.
- Cook and drain rice (keep hot).
- Brown pineapple slices in 1 tablespoon butter.
