Microwave Fruitcake
- 3/4 c. soft butter
- 6 Tbsp. dark brown sugar
- 3 Tbsp. corn syrup or honey
- 6 eggs
- 3/4 c. flour
- 3/4 tsp. salt
- 3/4 tsp. baking powder
- 1 tsp. nutmeg
- 1 tsp. allspice
- 1 tsp. cinnamon
- 1/3 c. brandy or rum
- 1 3/4 c. red cherries
- 1 3/4 c. green cherries
- 6 c. coarsely chopped walnuts
- Cream butter,
- sugar
- and
- corn syrup.tdd eggs 1 at a time, beating continually.
- Blend flour, salt, baking powder, nutmeg, allspice
- and cinnamon until smooth.
- Stir in brandy. Fold in cherries
- and
- nuts.
- Pour into 12 cup Bundt pan (very lightly greased).
- Microwave on High for 18 minutes, rotating a quarter turn every 4 minutes.
- Rest 15 to 20 minutes before loosening. Invert from pan.
- Glaze if desired.
