Simply Shrimp and Spinach Squares #5FIX

  1. Preheat oven to 400 degrees.
  2. Unfold pastry sheets onto parchment paper and cut each sheet into 4 squares.
  3. Top 4 of the squares with 1/2 of the spinach leaves.
  4. Combine the shrimp, potatoes, and cheese.
  5. Spoon this mixture evenly onto the spinach leaves.
  6. Top mixture with the remaining spinach leaves.
  7. Cover each spinach/mixture topped square with the remaining 4 pastry sheets and carefully crimp the edges so that all the spinach leaves and filling are completely encased in each packet.
  8. Leave on parchment paper and transfer to a baking sheet.
  9. Bake at 400 degrees for 15 minutes, or until pastry is golden brown.
