Beef Carpaccio Rolls With Arugula And Manchego Cheese Recipe
- 2 c. Balsamic vinegar
- 1 tsp Honey
- 1/4 lb Arugula cleaned
- 1 Tbsp. Balsamic vinegar
- 2 tsp Extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
- 12 x Paper-thin slices beef round pounded
- 12 x Paper-thin slices Manchego cheese
- Bring balsamic vinegar to a boil in a medium saucepan over medium-high heat and reduce it to 1/2 c., stir in the honey.
- Let cold.
- Toss arugula with vinegar and oil and season with salt and pepper to taste.
- Lay out 1 slice of beef on a flat surface.
- Place 1 slice of cheese and two Tbsp.
- of the arugula in the middle of the beef and roll up tightly.
- Repeat with the remaining beef.
- Place on platter and drizzle with balsamic reduction.
