Frito Plate

  1. In a large pot or Dutch oven, brown the ground beef.
  2. Once all pink is gone, add in the taco seasoning.
  3. Stir to combine and cook for about 2 minutes so the flavor can incorporate.
  4. Add in the garlic, rosemary, salt, pepper, sage and thyme.
  5. Next add the cans of chili (homemade works too!)
  6. and stir to combine.
  7. Begin adding the spaghetti sauce; you dont want the mixture to be too saucy so add a little at a time.
  8. Turn heat to a simmer and finish adding sauce if necessary.
  9. In the meantime, cook the rice if you havent already.
  10. Let the meat mixture simmer uncovered for about 20 minutes, enough time for all the flavors to meld.
  11. Continue stirring so it doesnt stick to the bottom.
  12. When the rice is finished, pour a plateful of Fritos.
  13. Sprinkle rice on top of the chips, and follow with generous spoonfuls of meat mixture.
  14. At this point you can top it with things like shredded cheddar, tomatoes, olives, lettuce, guacamole, sour cream, whatever your heart desires!
  15. I recommend keeping a fork nearby.
  16. Enjoy!
