Cultured Spicy Salsa

  1. Mix all ingredients and place in a very clean quart-sized, wide mouth mason jar.
  2. Press down with a wooden spoon, adding more water to cover the vegetables.
  3. Be sure to leave 1-2 head space.
  4. Adding filtered water to cover if needed.
  5. Cover tightly and keep at room temperature for 2-3 days before transferring to the refrigerator.
