Hot Chili(Texas Style)
- 1 1/2 lb. sirloin steak, diced
- 1/2 lb. chorizo sausage
- 6 slices bacon
- 4 medium onions, chopped
- 2 cloves garlic, chopped
- 1 medium bell pepper, chopped
- 2 pickled jalapeno peppers, rinsed, seeded and chopped
- 2 whole jalapeno peppers
- 3 Tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. oregano
- 1 tsp. salt
- 1 tsp. crushed red pepper
- 1 can (18 oz.) tomato paste
- 2 1/2 c. water
- additional water as needed for drinking purposes
- Fry bacon until crisp; drain and crumble.
- Set the bacon aside and brown the chorizo sausage in the same pan.
- Drain the sausage, reserving 2 tablespoons of the drippings and add to the bacon; set aside.
- Add the sirloin beef, garlic, green pepper and onions to the reserved drippings and brown.
- Transfer to large saucepan. Add bacon, sausage and remaining ingredients.
- Bring to a slow boil; simmer, uncovered, for 2 hours, stirring occasionally. Makes about 1/2 gallon.
