Mandarin Salad
- 1/2 cup almonds sliced
- 3 tablespoons sugar
- 1/2 head iceberg lettuce
- 1/2 head romaine lettuce
- 1 cup celery chopped
- 3 each scallions, spring or green onions chopped
- 1/2 cup vegetable oil
- 4 tablespoons sugar
- 1 tablespoon salt and black pepper
- 4 tablespoons apple cider vinegar
- 1 tablespoon parsley leaves
- 11 ounces mandarin oranges 1 can
- Over medium heat cook sliced almonds and sugar, stirring constantly until almonds are glazed and sugar dissolved.
- Cool.
- Combine torn iceberg and romaine lettuce, chopped celery and green onions.
- Prepare Dressing:
- Mix together all dressing ingredients in small bow.
- Toss oranges, lettuce, almonds and dressing immediately before serving.
