Kale and White Bean Soup

  1. Wash kale, remove leaves from stem and cut into bite size pieces.
  2. Set aside.
  3. Heat oil sautee onions add garlic red pepper saute for 1 minute.
  4. Add beans broth, water and oregano bring to a simmer.
  5. Add kale cook 15 minutes.
  6. garnish with feta (optional).
