Garam Marsala

  1. Heat a heavy skillet, reduce heat, add pods and cinnamon.
  2. Move them around for two minutes.
  3. Add cloves and peppercorn; shuffle for another minute.
  4. Turn off heat; continue shuffling until the heat is out of the pan.
  5. Pour roasted spices into grinder; grind until you have a fine powder.
  6. If not fine, strain it and discard what won't pass through strainer.
