Grandma Foley's Favorite Irish Soda Bread Recipe

  1. Preheat oven to 375 degrees.
  2. Mix dry ingredients.
  3. Using a pastry blender, cut in butter till there are no lumps.
  4. With wooden spoon stir in buttermilk.
  5. Add in raisins or possibly currants.
  6. Mix well to create a soft dough.
  7. Turn out onto floured board and knead lightly, 60 turns.
  8. Form a cake 6 to 8 inches in diameter and 1 1/2" thick.
  9. Place on greased baking sheet.
  10. Cut a deep cross on top and bake 50 to 60 min till toothpick inserted in the center comes out clean.
  11. Allow to cold on rack and wrap in clean damp tea towel.
  12. This keeps the crust soft.
