Sunomono-Style Carrot, Cucumber, and Egg Salad

  1. Julienne the carrot, wrap in cling film, and microwave for 30 seconds.
  2. Slice the cucumber thinly.
  3. Sprinkle with a little salt and squeeze.
  4. Beat the eggs.
  5. Heat vegetable oil in a pan, and cook chunky scrambled egg.
  6. Mix soy sauce and the sweet and sour sauce in a bowl, and add the carrot, cucumber and egg.
  7. Toss and serve on a plate.
  8. Sprinkle with white sesame seeds.
  9. I added cellophane noodles for this version.
  10. This is filling and also good!
