Deviled Crab Dressing
- 7 Tbsp. butter or margarine, divided
- 1 c. thinly sliced scallions
- 2/3 c. thinly sliced celery
- 8 oz. fresh picked crab meat
- 3 Tbsp. minced fresh parsley
- 2 Tbsp. lemon juice
- 2 Tbsp. Worcestershire sauce
- 1/2 tsp. ground mustard
- 1/4 tsp. hot pepper sauce
- 1 (8 oz.) pkg. herb seasoned bread stuffing
- 3/4 to 1 c. cream or half and half
- In large, deep skillet over medium heat, melt 6 tablespoons butter.
- Add scallions and celery.
- Saute about 1 minute.
- Stir in crab meat and saute briefly.
- Stir in seasonings and bread stuffing.
- Moisten mixture with half and half to taste.
- Toss lightly.
- Place dressing in lightly buttered baking dish.
- Dot with any remaining butter.
- Bake loosely covered with foil in oven with hens during last 30 minutes.
- Serves 6 to 10.
