Green Chili Rice

  1. Cut monterey jack cheese into strips, each about 2" long and 3/4" wide.
  2. In a small bowl, combine sour cream and chilies.
  3. Season rice with salt and pepper.
  4. Layer one-third of the rice, half the sour cream mixture, and half the cheese strips into a greased casserole dish.
  5. Repeat the layers, ending with a layer of rice on top.
  6. Bake, covered, at 350 for 25 minutes.
  7. Remove cover and top dish with grated cheddar cheese.
  8. Bake an additional 10 minutes, uncovered.
  9. Let stand 10 minutes before serving.
