Herb-Roasted Root Vegetables
- 2 medium turnips
- 2 medium parsnips
- 1 medium red onion
- 1 cup baby carrots
- cooking spray
- 2 teaspoons italian seasoning
- 12 teaspoon coarse salt
- peel and cut turnips into 1 inch pieces.
- peel and cut parsnips into 1/2 inch pieces.
- Cut onion into 1 inch wedges.
- Preheat Oven to 425.
- Spray 15x10x1 pan with cooking spray.
- Arrnage vegetables in single layer
- Spray with cooking spray.
- Sprinkle Italain seasoning and coarse salt.
- Bake uncovered for 45 to 55 minutes stirring once-until vegetables are tender.
