Creamy Cubed Steak
- 1 to 1 1/2 lb. cubed steak
- 1/4 tsp. cracked pepper
- 3 Tbsp. all-purpose flour
- 2 Tbsp. butter or margarine
- 1/4 tsp. salt (optional)
- 1/2 lb. sliced fresh mushrooms
- 1/2 c. sour cream (lite; sour cream or half plain yogurt and half sour cream)
- 1/4 tsp. pepper
- 1 tsp. Worcestershire sauce
- 1 tsp. paprika
- Cut steak into 4 serving pieces if necessary.
- Combine cracked pepper and flour.
- Dredge meat in mixture.
- Discard any excess flour.
- Brown steaks in 1 tablespoon butter over medium-high heat for 4 to 5 minutes.
- Turn steaks once.
- Keep warm on serving platter.
- Sprinkle with salt.
- Add remaining butter to skillet. Add sliced
- mushrooms.
- Cook over medium-high heat, stirring, until golden.
- Stir in sour cream, pepper, Worcestershire and paprika.
- Heat, but do not boil or mixture may separate.
- Spoon sauce over steaks and serve.
- Sprinkle with more paprika if desired.
