Creamy Twice Baked Potato

  1. Heat oven to 400F.
  2. Bake potato 1 hour.
  3. Reduce oven temperature to 350F.
  4. Cut potato in half lengthwise; scoop out potato, leaving thin shell.
  5. Mash potato with sour cream, cream cheese spread and 2 Tbsp.
  6. cheddar.
  7. Spoon mixture into shells; sprinkle with remaining cheddar.
  8. Place in shallow baking dish.
  9. Bake 15 to 20 min.
  10. or until cheese is melted.
