Cornish Hens With Chestnut-Sausage Stuffing

  1. Preheat oven to 350u0b0.
  2. In a large skillet, cook onion and celery in Italian dressing, stirring until tender.
  3. Add sausage and cook 5 minutes or until browned.
  4. Stir in bread crumbs, chestnuts, pine nuts and herbs.
  5. Stuff hens with mixture.
  6. Close cavities with skewers and tie legs together with string.
  7. Place in roast pan on racks.
  8. Cover loosely with aluminum foil and roast 1 hour.
  9. Remove foil and continue roasting 15 minutes, approximately until done.
