Spinach Party Salad(Great For A Luncheon)
- 5 oz. fresh spinach (1/2 pkg.)
- 6 hard-cooked eggs, chopped fine
- 1 (10 oz.) pkg. frozen peas, thawed (do not cook)
- 1 c. sour cream
- 1/2 lb. thinly sliced Swiss cheese
- salt, pepper and sugar (optional)
- 1/2 lb. thinly sliced baked ham, cut in small strips
- iceberg lettuce, torn
- 1 red Bermuda onion, sliced thin
- 2 c. mayonnaise
- 1/2 lb. bacon, cooked crisp and crumbled
- Wash and drain spinach and lettuce well.
- Spread spinach in 13 x 9 x 2-inch pan.
- Sprinkle with salt, pepper and sugar.
- Add layer of eggs.
- Scatter peas on top.
- Spread onion rings over that.
- Mix mayonnaise and sour cream and spread over top (like frosting on cake).
- Arrange Swiss cheese on top.
- Refrigerate overnight.
- Do not toss.
- Add bacon over top before serving.
- Cut portions in squares all the way through and serve to plate with spatula.
- Tuna, shrimp, turkey, crab or lobster may be added. Serves 8 to 9.
