Robin's Baked Mac & Cheese
- 2 1/2 cup Macaroni, Penne, or Other Pasta
- 2 1/2 cup Whole Milk
- 3 cup Grated Mature Cheddar Cheese
- 3 tbsp Salted Butter
- 1/4 cup Plain Flour
- 1 tsp English Mustard
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 1 dash Paprika
- Note: I always double this recipe and it still turns out great.
- Preheat oven to 375F.
- Grate cheese and set aside.
- Boil pasta until al dente.
- Rinse with cool water, place back in pot, and add a little butter to keep from sticking.
- Over medium heat melt salted butter in a sauce pan.
- Add mustard and dry ingredients, stirring for 2 minutes.
- Pour in milk and whisk for 10 minutes until thickened.
- Add 2 cups of cheese into the sauce until melted.
- Pour sauce over the pasta and stir.
- Add half of the pasta to a buttered casserole dish and sprinkle 1/2 cup of cheese on top.
- Layer the other half of the pasta on top and sprinkle with 1/2 cup of cheese and bread crumbs.
- Bake for 30 minutes or until top is bubbling and browned.
