Broccoli Cheese Casserole Recipe
- 2 Packages frzn minced broccoli, thawed
- 1 c. Minute Rice
- 1/4 c. butter
- 1 med. onion, minced
- 1/2 pound Velveeta cheese, cubed
- 1 can cream of mushroom soup
- 1 sm. can evaporated lowfat milk
- Heat butter and saute/fry onion till translucent/soft.
- Add in soup, lowfat milk and cheese and cook till smooth, stirring frequently.
- Add in rice and broccoli and pour into 2 qt casserole.
- Bake for 40 to 50 min at 350 degrees.
