Cinnamon-Pineapple Quesadillas
- 4 tsp. butter, softened, divided
- 4 flour tortillas (6 inch)
- 2 Tbsp. sugar
- 1 tsp. ground cinnamon
- dash ground nutmeg
- 4 fresh pineapple rings, 3/4 inch-thick
- 1/2 cup thawed COOL WHIP LITE Whipped Topping
- Brush 2 tsp.
- butter evenly onto both sides of tortillas.
- Mix sugar, cinnamon and nutmeg; sprinkle onto both sides of tortillas.
- Stack tortillas on microwaveable plate; cover with paper towel.
- Melt remaining butter in medium nonstick skillet on medium-high heat.
- Add pineapple; cook 1 to 2 min.
- on each side or until heated through and evenly browned.
- Remove from skillet; cut in half.
- Microwave tortillas on HIGH 30 to 40 sec.
- or just until warmed.
- Unstack tortillas.
- Top with pineapple and COOL WHIP; fold in half.
